200 gr white fish
100 gr jumbo prawns
2 tbsp red curry paste
1 egg
1 tbsp sugar
6 pieces of kouseband (long bean related to French beans) cut into small pieces
6 fresh lemon leaves, thinly sliced
some oil
a wok

Get the red curry at a well-stocked Asian grocery store. Don't try and make it yourself; it’s just too much work!

Chop the fish and prawns to a fine white pulp, Thai style. Mix with all other ingredients. Create thick, flat discs of this “dough” and fry them in boiling oil until the inside is warm. Serve with some chopped coriander.
