200 gr boneless chicken
2 tbsp green curry paste
1 can coconut milk
1 tbsp sugar
2 tbsp oil
1 tbsp fish sauce
3 fresh lemon leaves, thinly sliced
1 cup of fresh Thai basil
a wok

Put the oil and 3/4 of the coconut milk in a wok and cook, reduce until 1/4 of the original amount. Add all ingredients, but hold the chicken. Cook everything for about 5 minutes until everything is well combined.

Now add the chicken. Stir it around a bit, add the remainder of the coconut milk and some fish sauce (or Nam Pla). Simmer for about 15 minutes with the lid on. Serve in bowls. Garnish with the Thai basil.
