10 uncooked jumbo prawns, peeled leaving tail intact
1 tbsp fish sauce or Nam Pla
1 tbsp lemon or lime juice
1 tbsp sugar
1 cup of coriander
1 stick of lemon grass, thinly sliced
1 chopped spring onion
2 peeled tomatoes, diced

Blanch the prawns quickly in boiling water, just until tender. Mix everything together and garnish with some chopped chilli peppers.
